Kerala Vegetable Curry

A tasty curry with vegetables

Ingredients
  

  • 1 no Carrot
  • 10 nos Beans
  • Cauliflower A few florets
  • 2 nos Potatoes
  • 1 no Onion large
  • 2 nos Green chillies
  • 1/2 tsp Chilly powder
  • 1/4 tsp Turmeric powder
  • 3 tbsp Coconut milk powder
  • 1 tsp Kasoor methi
  • 1 tsp Black gram Uzhunnuparippu
  • 1 tsp Mustard seeds
  • Curry leaves A few
  • Salt As reqd

Instructions
 

  • Pressure cook all the vegetables, onion and split green chillies with enough water, salt, turmeric powder and chilly powder.
  • Heat 1 tsp of oil in a pan.
  • Splutter black gram, mustard seeds and curry leaves.
  • Put the cooked vegetables into this and pour the coconut milk.
  • When it starts boiling, remove from flame and put kasoor methi and cover the pan.
  • :- Serve with chappathi and roti.
