Cucumber Dal Curry

It's my daughter's favourite curry that goes well with steamed rice.It's a very simple,easy and protein rich curry that requires minimum amount of oil.Cucumber dal curry requires little amount of coconut and that gives it a nice flavour.

Ingredients
  

  • 1 Cucumber
  • 3/4 cup Tur Dal
  • 1 cup Coconut
  • 1/2 tsp Turmeric powder
  • 1/4 tsp Red chilli powder
  • Salt to taste
  • Water as required
  • For seasoning
  • 1/2 tsp Mustard
  • 2 tbsp coconut oil
  • Curry leaves few
  • 3 shallots chopped

Instructions
 

  • Wash dal and cucumber.
  • Take a pressure cooker add washed dal and chopped cucumber. Add some turmeric powder,red chilli powder,salt and water as required
  • Cook it for 3-4 whistle.
  • Grind coconut with little water and adding to the curry.
  • Mix well,when it starts boil,remove it from the flame
  • Heat oil in a pan and splutter mustard seed.add chopped shallots and curry leaves.when it turns light brown in colour,turn off the flame.
  • Mix it with the curry.
  • Tasty cucumber Dal Curry is ready.
