Vayakkathil Appam

Vayakkathil Appam is a traditional evening snack recipe usually prepared with mysore pazham but now it is jackfruit season and I substitite it with jackfruit.Fresh jackfruit adds an extra sweetness to the Appam.They are mainly made with rice,jaggery

Ingredients
  

  • 2 cup Raw rice soak overnight
  • 1 cup Jackfruit puree
  • 1 1/2 cup Jaggery
  • 1/2 cup Maida
  • salt pinch
  • Water as required

Instructions
 

  • Powder the rice using a blender,it should powder too fine.
  • Remove the jackfruit seeds and grind it to a fine paste.
  • Dissolve the jaggery in half cup of water
  • In a bowl,add rice powder,maida,jackfruit puree,melted jaggery,salt and water.Mix it well,it should not be too runny.
  • Heat a pan,pour some batter and fry it until golden brown in colour.
  • Vayakkathil appam is ready to serve.
