Vada Pav Mumbai Style

An Authentic receipe of Mumbai's Most Famous Street Food.

Ingredients
  

  • 7 Boiled Mashed Potatoes: 6 Medium Size
  • Salt:1 tsp or as per taste
  • Finely Chopped corainder leaves:2 tsp
  • Turmeric Powder:half tsp
  • Corainder Powder :1 tsp
  • Pav for serving

For Batter:

  • Besan:1 cup
  • Salt:1 tsp
  • Turmeric powder: half tsp
  • Red Chilli powder:half tsp
  • Coriander Powder:half tsp
  • Soda bi- carb: 2 pinch
  • Water:1 cup( As per need)

Instructions
 

  • To make the vada paste ,take the boiled mashed potatoes in a big plate
  • add salt
  • Add chopped corainder leaves
  • Add turmeric powder
  • Add coriander powder(Dont Mix till tempered)
  • For tempering the vada paste,Heat Oil in a Temper pan or kadai,
  • wait untill properly heated add urad dal
  • wait till it becomes golden brown now add mustard seeds
  • Add jeera
  • chopped green chilles
  • Add crushed and chopped garlic
  • Add curry leaves
  • mix well for 20 secs or so
  • remove from heat and add the same tempering in the Vada paste which we prepared
  • Now mix the vada paste very well and make medium size flat balls and keep aside.
  • Keep the kadai on the flame taking adequate oil for deep frying
  • For Besan paste take the besan in a bowl,add salt
  • Add turmeric powder
  • Add Coriander powder
  • Add Red Chilli powder
  • Add Soda Bi carb and mix well adding water gradually
  • make a smooth free flowing thick paste,
  • Now take the potato ball one at a time dip it gently with light hands,make sure the besan mixture is coated well and put in the kadai kept for deep frying
  • Keep the flame medium,repeat the proceedure adding 3-4 vadas for deep frying at a time depending on the size of your kadai.Flip the vadas and let them turn golden brown
