Vada Pav Mumbai Style

Ingredients
  

  • 6 Nos. Boiled Mashed Potatoes Medium Size
  • 2 Tbsp Coriander leaves Chopped
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Corainder Powder
  • Pav buns for serving
  • Salt As reqd

For Preparing Batter:

  • 1 Cup Besan
  • 1/2 Tsp Turmeric powder
  • 1/2 Tsp Red Chilli powder
  • 1/2 Tsp Coriander Powder
  • 2 Pinches Soda bi-carb
  • 1 Cup Water As reqd
  • Salt As reqd

Instructions
 

  • First, take the boiled mashed potatoes in a big plate.
  • Add required salt.
  • Add chopped coriander leaves.
  • Add turmeric powder.
  • Add coriander powder. (Dont Mix till tempered)
  • For tempering: Heat oil in a kadai,
  • Wait until properly heated and add urad dal.
  • Wait till it becomes golden brown. Next, add mustard seeds.
  • Add cumin seeds.
  • Add chopped green chillies.
  • Add crushed and chopped garlic.
  • Add curry leaves.
  • Mix well for 20 secs or so.
  • Remove from heat and add the tempering to the potato mix. Mix well.
  • Make medium sized flat balls and keep aside.
  • Keep the kadai on the flame and take adequate oil for deep frying.
  • For preparing Besan batter: Take the besan in a bowl and add required salt.
  • Add turmeric powder.
  • Add Coriander powder.
  • Add Red Chilli powder.
  • Add Soda Bi carb and mix well adding water gradually.
  • Make a smooth free flowing thick paste,
  • Now take the potato ball one at a time, dip it gently with your hand. Make sure that the besan mixture is coated well and put in the kadai for deep frying.
  • Keep the flame medium, repeat the procedure adding 3-4 vadas for deep frying at a time depending on the size of your kadai. Flip the vadas and let them turn golden brown.
  • Insert the vada in the pav buns. Enjoy Vada Pav Mumbai Style.
