Egg Gravy

Egg gravy is commonly done in south India and there are more methods of making it. Here is a very simple way of making this egg gravy using coconut milk . This is one of the flavorful gravy that goes very well with pulavs , roti and dosas. This egg gravy is prepared only by sauting few onions and tomatoes and then it is been added with the coconut milk bring to the boil and then add the split eggs and serve hot.

Ingredients
  

  • eggs boiled 4
  • oil 3 tbsp
  • mustard 1 sp
  • onions sliced 1 cup
  • tomato 1
  • coconut milk 1 1/2 cup
  • red chilli powder 1 sp
  • coriander powder 1 sp
  • turmeric 1/4 sp
  • salt to taste

Instructions
 

  • in oil saute mustard ,onion and curry leaf
  • add tomatoes to it
  • in coconut milk add red chilli powder, coriander powder ,turmeric and salt
  • add this coconut milk to the pan and cook till oil oozes out
  • now slowly add spilt eggs garnish and serve with rice ,rotis or dosas
