Bean carrot fry is a classic south indian preparation of mixed vegetables.carrots are an excellent source of vitamin A and C.beans are a great source of fiber,vitamins and minerals.
Cut the vegetables.more we increase the size of vegetables it reduces the risk of discoloration,flavour loss,texture loss and nutrient loss
Grind garlic and green chilly
Let 1/4 tsp mustard splutter in hot oil and add the veggies init.if using other veggies you can also add them now.fry for 2-3 minutes on a medium flame until the raw smell of the beans goes off
Add salt,grinded green chilly and garlic.lower the flame,cook covered until the veggies turn cooked
You can serve the bean carrot fry with plain rice or any other flavored rice
