chop the onion, garlic, and tomato
slice the eggplant
peel the jackfruit seed skin and cut into two pieces and boil by adding salt
in pan heat the oil and temper the mustard, broken urad dal, garlic and curry leaves
add red chili and onion and saute it for 3 mins.
add tomato and mix it
add eggplant, mix it and allow to cook for 3 mins
add sambar powder, salt and turmeric and mix well
add boiled jackfruit seed and mix it, and add 1 glass of water and allow to cook
once the egg plant cooked well and becomes curry consistence add grated coconut and turn off the flame
now egg planr jackfruit seed curry is ready to serve
