Eggplant Jackfruit Seed Curry

Jack fruit seeds are edible and it is widely used in south Indian cooking when its in season. Eggplant and Jackfruit Seed Curry is a delicious Indian recipe served as a Curries.

Ingredients
  

  • Eggplant 200 gram
  • jackfruit seed 100 gram
  • onion 15 no.
  • garlic 5 no.
  • red chili 2 no.
  • tomato 1 no.
  • sambar powder 1 tsp
  • turmeric 1/2 tsp
  • salt to taste
  • grated coconut 4 tsp
  • oil 4 tsp
  • mustard 1/2 tsp
  • broken urad dal 1/4 tsp
  • curry leaves 6 no.

Instructions
 

  • chop the onion, garlic, and tomato
  • slice the eggplant
  • peel the jackfruit seed skin and cut into two pieces and boil by adding salt
  • in pan heat the oil and temper the mustard, broken urad dal, garlic and curry leaves
  • add red chili and onion and saute it for 3 mins.
  • add tomato and mix it
  • add eggplant, mix it and allow to cook for 3 mins
  • add sambar powder, salt and turmeric and mix well
  • add boiled jackfruit seed and mix it, and add 1 glass of water and allow to cook
  • once the egg plant cooked well and becomes curry consistence add grated coconut and turn off the flame
  • now egg planr jackfruit seed curry is ready to serve
