Raw Mango Sambar

Sambar was the integral part of the southindian cuisine. It is a tangy lentil curry with fresh vegetables. Mango sambar is the most tangy, flavorful as well as spicy sambar

Ingredients
  

  • thoor dal 1 cup
  • raw mango 1 no.
  • drum stick 2 no.
  • brinjal 4 no.
  • tomato 2 no.
  • small onion 15 no.
  • red chili 3 no.
  • garlic 4 no.
  • turmeric 1 tsp
  • sambar powder 2 tsp
  • salt to taste
  • oil 4 tsp
  • castor oil 2 tsp
  • mustard 1/2 tsp
  • broken urad dal 1/4 tsp
  • cumin seed 1 tsp
  • fenugreek seed 1 tsp
  • curry leaves 10 no.
  • coriander leaves to garnish

Instructions
 

  • cook the dal by adding, salt, turmeric, garlic, castor oil and one tomato
  • chop the onion, mango and drum stick
  • slice the brinjal
  • in a kadai heat the oil and temper the cumin seed, fenugreen seed and curry leaves
  • add onion and curry leaves and saute it
  • add tomato and mix it
  • now add drumstick and brinjal and mix well
  • add salt and sambar powder and mix it
  • add required water for sambar and allow to cook for 5 mins
  • now add cooked dal and allow to cook for 10 mins
  • once the drumstick get cooked add raw mango and mix well and turn off the flame
  • in a pan heat the oil and temper the mustard, broken urad dal, red chili and curry leaves
  • transfer the tempered oil to the raw mango sambar
  • garnish with coriander leaves. now raw mango sambar is ready to serve
