Carrot Beans Poriyal
Carrot and Beans Poriyal is a classic South Indian preparation of the mixed stir fried vegetables. Steamed carrots and beans are seasoned with mustard seeds, urad dal and curry leaves.

Carrot 100 gram beans 100 gram cabbage 25 gram moong dal 1/4 cup small onion 1/2 cup green chili 2 no. salt to taste oil 4 tsp mustard 1/2 tsp broken urad dal 1/4 tsp grated coconut 1/4 cup curry leaves 1 bunch
chop the onion green and chili
chop the carrot, beans and cabbage
soak the moong dal in water for 10 minutes
heat the oil in the pan and temper the mustard, broken urad dal
add onion, green chili and curry leaves and saute it until the onion turn into brown
add carrot, beans and cabbage and mix well
add salt and moong dal and mix it
add 3 glass of water and allow to cook the vegetables
once the water get dry and the vegetable get cooked add grated coconut and mix well and turn off the flame
now carrot beans poriyal is ready
