Carrot Beans Poriyal

Carrot and Beans Poriyal is a classic South Indian preparation of the mixed stir fried vegetables. Steamed carrots and beans are seasoned with mustard seeds, urad dal and curry leaves.

Ingredients
  

  • Carrot 100 gram
  • beans 100 gram
  • cabbage 25 gram
  • moong dal 1/4 cup
  • small onion 1/2 cup
  • green chili 2 no.
  • salt to taste
  • oil 4 tsp
  • mustard 1/2 tsp
  • broken urad dal 1/4 tsp
  • grated coconut 1/4 cup
  • curry leaves 1 bunch

Instructions
 

  • chop the onion green and chili
  • chop the carrot, beans and cabbage
  • soak the moong dal in water for 10 minutes
  • heat the oil in the pan and temper the mustard, broken urad dal
  • add onion, green chili and curry leaves and saute it until the onion turn into brown
  • add carrot, beans and cabbage and mix well
  • add salt and moong dal and mix it
  • add 3 glass of water and allow to cook the vegetables
  • once the water get dry and the vegetable get cooked add grated coconut and mix well and turn off the flame
  • now carrot beans poriyal is ready
