Ivy Gourd / Kaovakkai Stir Fry

Ivy gourd / kaovakkai stir fry, A quick and easy side dish with kovakkai that goes very well with both rice and chappathis. This Kovakkai Curry or rather fry is a very simple one that does not involve any grinding of masala.

Ingredients
  

  • Kovakkai / Ivy Gourd 250gm
  • Onion 2no.
  • tomato 1 no.
  • green chili 1 no.
  • Grated Coconut 1 Cup
  • Red chili powder 1 tsp
  • turmeric powder 1/2 tsp
  • salt to taste
  • oil as required
  • curry leaves 1 bunch
  • mustard 1 tsp
  • broken urad dal 1 tsp
  • bengal gram 2 tsp

Instructions
 

  • Chop the Kovakkai / Ivy gourd In round shape
  • Chop the onion, green chili and tomato
  • Heat the Oil in the pan and fry the ivy gourd / kovakkai
  • now heat the oil in other pan and temper the mustard, broken urad dal and bengal gram
  • add chopped onion, green chili and tomato and saute it for 5 minutes
  • add fried ivy gourd / kovakkai and mix well
  • add red chili powder, turmeric powder and salt and mix well and allow to cook for 2 mins
  • now add grated coconut and mix well and allow to cook until the ivy gourd / kovakkai get cook well
  • now ivy gourd / kovakkai stir fry is ready
