Carrot Rice

carrot rice recipe – Quick rice recipe for the busy days, can make it for lunch, dinner or for lunch box.

Ingredients
  

  • steamed rice 1 cup
  • carrot 3 no.
  • small onion 15 no.
  • red chili 2 no.
  • garlic 3 no.
  • curry leaves 5 no.
  • oil 4 tsp
  • mustard 1/2 tsp
  • broken urad dal 1/4 tsp
  • coconut 1/4 cup

Instructions
 

  • grate the carrot
  • chop the onion, garlic, red chili, grate the coconut
  • heat the oil the pan and temper the mustard, broken urad dal, curry leaves and red chilies
  • add onion and saute it until the onion get golden colour
  • add grated carrot and mix well
  • add salt ,turmeric powder and mix well
  • allow the carrot to get cooked for 10 minutes
  • add grated coconut and mix well
  • prepare the steamed rice
  • add that steamed rice in carrot and mix well
  • allow to cook for 5 minutes in a low flame
  • now carrot rice is ready to serve
