Instant Aloo Podimas

potato podimas is basically mashed potatoes which are tempered & spiced with the regular south indian spices and herbs. this recipe of potato podimas is an inspiration from a south indian dish.

Ingredients
  

  • aloo 1cup
  • onion 2 no.
  • oil 4 tsp
  • mustard 1 tsp
  • broken urad dal 1 tsp
  • Bengal gram 1 tsp
  • Curry leaves 1 bunch
  • Salt to taste
  • Red chili powder ¼ tsp
  • Curry masala 1 tsp
  • Turmeric powder ½ tsp
  • Coriander leaves to garnish

Instructions
 

  • boil the aloo by adding salt and water in a cooker and allow for 2 whistles
  • smash the aloo roughly
  • chop the onion
  • in a pan heat the oil and temper the mustard, bengal gram and broken urad dal
  • add chopped onion and curry leaves and saute it until the onion turn into golden brown
  • add salt, red chili powder, turmeric powder and curry masala and mix well
  • allow the onion and spices.mix well for 2 minutes in a medium flame
  • add smashed aloo and mix well
  • allow the aloo to get mix well with the spices in medium flame for 5 to 10 minutes
  • garnish with coriander leaves. instant aloo podimas is ready to serve. serve with any variety rices
