Baingan Ka Bartha is a North Indian speciality of roasted brinjals, skinned and made into a simple but exotic preparation. This recipe has an unique aroma and taste.

Brinjal 3 Tomato 2 Onion 1 Green chilly 4 Chilly powder 1 tsp Turmeric powder 1/2 tsp Salt to taste Coriander powder 1/2 tsp Garam Marsala 1/2 tsp Garlic 3 cloves
Heat a pan and put our brinjal on it. use low flame
Pour some oil on it
When every side of the brinjal gets heated
Peel off the skin frofrom brinjal
Crush it well
Heat a pan and pour oil when its hot.
Put onion to the oil
Stir well and add garlic on it
When its saluted well put all the powders and salt to it.
Pour tomato
Stir well
Pour the crushed brinjal on it
Stir well and put green chillies on it
Stir well and close the pan and wait for 5 to 10 minutes to get cooked
Transfer to the serving dish
