Baingan Sabji
Baingan Sabji is a fantastic and a simple North Indian side dish prepared with eggplant. It can be served with rotis, chappathi etc. It is spicy and also tasty.

5 Eggplant 1 chopped Onion 1 tsp Jeera 1 tsp Red chili powder 1 tsp Coriander powder 1/4 tsp Turmeric 1/2 tsp Garam masala Salt as taste 2 tblsp Oil
wash and cut the eggplant and keep aside
In a bowl add all powder and mix eggplant and rest for 10 minutes
In a pan add oil and temper jeera
add onion and fry till golden brown
Now add eggplant and mix well cook for 5 minutes
Now add water and cook in low flame for 10 minutes
Now mash like this in pan and cook for more 5 minutes
Now its ready to serve Baingan Sabji. serve with roti or idly dosa or rice
