Baingan Sabji

Baingan Sabji is a fantastic and a simple North Indian side dish prepared with eggplant. It can be served with rotis, chappathi etc. It is spicy and also tasty.

  • wash and cut the eggplant and keep aside
  • In a bowl add all powder and mix eggplant and rest for 10 minutes
  • In a pan add oil and temper jeera
  • add onion and fry till golden brown
  • Now add eggplant and mix well cook for 5 minutes
  • Now add water and cook in low flame for 10 minutes
  • Now mash like this in pan and cook for more 5 minutes
  • Now its ready to serve Baingan Sabji. serve with roti or idly dosa or rice
