Heat oil in a kadai add grated coconut,chilli powder,turmeric powder and coriander powder ,saute for 2 minutes in stove.
Switch off gas until the coconut turns brown .Allow it to cool.
Grind this mix in mixer and keep it aside.
Heat oil in a kadai and add onions, saute for 2 minutes.
Add tomatoes and saute for 2 min low flame.
Add the grind mix to this and saute for 2 minutes.
Add cooked brinjal,cooked potatoes and grind mix and tomato mix in a big vessel boil for 2 minutes.
Cook for 5 minutes until gravy becomes thick.
Heat oil in a kadai add mustard,dry red chilly and curry leaf add this tempering to curry.
Add this tempering to curry and is ready to serve.
