Brinjal Potato Varutharacha Curry

Ingredients
  

  • 1 cup Brinjal chopped
  • 1 Tomato
  • 1 Onion
  • 1 cup Grated coconut
  • 1 tsp Tamarind paste
  • 1 tsp Salt
  • 5 Curry leaf
  • 4 Chilly
  • 2 Dry red chilly
  • 1 tsp Mustard
  • 2 tsp Coconut oil
  • 1 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Chilly powder

Instructions
 

  • Heat oil in a kadai add grated coconut,chilli powder,turmeric powder and coriander powder ,saute for 2 minutes in stove.
  • Switch off gas until the coconut turns brown .Allow it to cool.
  • Grind this mix in mixer and keep it aside.
  • Heat oil in a kadai and add onions, saute for 2 minutes.
  • Add tomatoes and saute for 2 min low flame.
  • Add the grind mix to this and saute for 2 minutes.
  • Add cooked brinjal,cooked potatoes and grind mix and tomato mix in a big vessel boil for 2 minutes.
  • Cook for 5 minutes until gravy becomes thick.
  • Heat oil in a kadai add mustard,dry red chilly and curry leaf add this tempering to curry.
  • Add this tempering to curry and is ready to serve.
