Lajawab Baigan (Brinjal)

Rich and Tasty Indian recipe. It is a special item for kids, who don't like vegitables.

Ingredients
  

  • 2 nos Brinjal large size
  • 2 nos Tomato
  • 1/2 tsp Fenugreek seeds
  • 8 nos Small onions kunjulli
  • 1 inch Ginger
  • 2 nos Garlic pod
  • 2 nos Green chilly
  • 1/2 tsp Turmeric powder
  • 1 tbsp Chilli powder
  • 1/2 tsp Fennel seeds perumjeerakam
  • 1 lemon Tamarind paste
  • Jaggery/sugar as required
  • Oil (for frying)
  • 1 sprig Curry leaves
  • Salt to taste

Instructions
 

  • Cut the brinjal into 1 inch square pieces, Cut the tomatoes into 4 pieces. Heat oil in a kadai and fry the brinjal and tomatoes separately and keep aside.
  • Then add curry leaves and fenugreek seeds.
  • Grind together small onions, ginger, garlic, green chilly, turmeric powder, chilli powder and fennel seeds. Add this ground paste into the kadai and saute till the raw smell goes.
  • Now add the fried brinjal ,tamarind paste and salt.Mix it and cook in low flame.
  • Add the fried tomatoes and mix well. Then add grated Jaggery/sugar .When the gravy becomes thick switch off the flame.
  • Lajawab Baigan is ready. Serve hot with chapatis, roti and puris.
