Cut the brinjal into 1 inch square pieces, Cut the tomatoes into 4 pieces. Heat oil in a kadai and fry the brinjal and tomatoes separately and keep aside.
Then add curry leaves and fenugreek seeds.
Grind together small onions, ginger, garlic, green chilly, turmeric powder, chilli powder and fennel seeds. Add this ground paste into the kadai and saute till the raw smell goes.
Now add the fried brinjal ,tamarind paste and salt.Mix it and cook in low flame.
Add the fried tomatoes and mix well. Then add grated Jaggery/sugar .When the gravy becomes thick switch off the flame.
Lajawab Baigan is ready. Serve hot with chapatis, roti and puris.
