Make chutney with coconut, ginger, garlic, green chillis,fennel seeds and coriander leaves.( u can add some water while grinding and Make it fine paste)
In a pressure cooker add ghee and oil.
Add cashews.Then add 1 thinly sliced onion and Saute till light brown.
Add chutney and saute for some time.
Add chopped vegetables( carrot, beans, peas, potato, tomato) mix it.
Add soaked and drained basmati rice and mix every thing well.
Pour 4 cups of water, add some lemon juice .
When water begins to boil close the lid.
After 1 whistle switch of the flame and open after some time.
