Vegetable Pulusu

A typical andhra style curry that goes well with rice. A spicy and tasty side dish.

Ingredients
  

  • 4 Ladies Finger Vendakkaya
  • 2 Nos Carrot
  • 1 small Ash gourd Kumbalanga
  • 2 Nos Onion
  • 1 tspn Garlic pieces
  • 3 Tamarind lotion/juice
  • 1 tspn Cumin Seeds
  • (to get more taste, grind the cumin seeds and use that powder)
  • 1 tspn Turmeric Powder
  • 2 tspns Red Chilli Powder
  • ½ tspns Asafoetida powder
  • 3 tspns Coriander Powder
  • 2 tspsn Chopped Coriander leaves
  • 2-3 tspns Jaggery Powder
  • Salt As required
  • 2 Coconut/Sesame Oil
  • 1 tspn Mustard Seeds
  • 4-5 Nos Curry Leaves
  • 4 Red Chilli pieces

Instructions
 

  • Peel, wash and cut the Carrot, Ash gourd and Onion into small pieces. Also wash and cut the Ladies Finger into small pieces
  • Heat Oil in a frying pan, crack the mustard seeds in this oil and then add Red Chilli along with Curry leaves, Turmeric powder, Garlic pieces. After one or two minutes addtheCarrot, Ash gourd, Onion and Ladies Finger pieces into it.
  • Also add the asafoetida powder and salt and stir the mix well for about 2-3 minutes
  • Then add Tamarind Lotion/Juice along with some normal water and stir it further
  • Cover the frying pan with a plate and let the mix to cook well
  • When the mix is cooked well add the jaggery powder and stir it further
  • Vegetable Pulusu is ready, decorate it with chopped Coriander leaves.
