It is a famous south asian dish which is loved by everyone. It is a vegetarian dish that comprises bhurtha (minced vegetables) made from eggplant (baingan) which is grilled over charcoal or direct fire, to infuse the dish with a smoky flavour.
Roast the brinjal on a medium flame till well cooked.
The skin has charred completely cool peel and mash well.
Heat the oil in a pan and stir the onions till light brown.
Add minced garlic ginger green chilli, stir well and add chopped tomatoes
Now add mash brinjal and stir 2-3 minutes
Remove into an airtight container and keep the burning coal on the top of the brinjal.keep the cloves on the top of the burning coal and put ghee on the top of the coal and cloves.
Close the container tightly and don’t allow the smoke to go outside of the container.
After 5 minutes open the container, remove the cloves and coal mix well and serve with chapati or rice.
