Vegetable Rice With Soya Chunks

Easy rice dish with healthy soya chunks

Ingredients
  

  • Biriyani rice : 1 cup
  • Water : 1 ½ cup
  • Crushed garam masala : 1 tsp
  • Onion : 1 no (chopped)
  • Green chillies : 1 no
  • Ginger garlic paste : 2 tsp
  • Carrot/Beans/Corn/Capsicum : 1 cup
  • Salt : as reqd
  • For Soyachunk Masala
  • Soya chunks : few

Instructions
 

  • First soak rice in water. Drain and strain it to remove water completely.
  • In a frying pan, add little oil. Fry onion, ginger-garlic paste. Add green chillies and garam masala.3) Add the rice and fry for few minutes. Add the mixed vegetables and salt.
  • Add 1 ½ cup of boiling water and cook rice. 5) When done, keep aside.6) In a pressure cooker or in kadai, add 3 tbsp oil. 7) Add the crushed garam masala (use freshly ground garam masala for better taste). 8) When it splutters, add the onion, ginger-garlic and fry till soft.
  • Mean while, grind tomato, chilli powder, coriander and cumin powder.10) Add this to the onion mixture and fry well. Till the oil clears at the top.11) Add biriyani masala, turmeric salt.
  • Add the soya chunks (should be soaked in water for at least 1 hour before cooking).13) Add capsicum,salt. Add little water and cook the soya.
  • When done, make it a semi dry masala.
  • In a serving plate add the veg rice and top it with the soya chunk masala.
