Raw rice : 1 cup
Grated coconut : ½ cup
Black gram : 2 tsp

Bengal gram : 2
Green chilli (sliced) : 2 nos
Mustard seeds : 1 tsp
Curry leaves : 1 stem
Coriander leaves (chopped) : as reqd
Cashew nuts : 5 pieces
Salt : to taste

Instructions
Cook the raw rice in medium flame and remove the water from it and keep it aside for some time to cool.
Heat oil in a frying pan and add the mustard seeds and allow to burst them.
Then add black gram, bengal gram, cashew nuts, grated coconut and sliced green chilli and stir the mix well.
After 2 - 3 minutes, add the curry leaves also and stir it further.
When the colour of the mix turns into golden, add the cooked rice and required quantity of salt and stir it well.
Coconut rice is ready and can be served with coconut chutney / pickles.
This is a very tasty food and can be prepared very easily.
