Coconut Rice Ready Within 15 Minutes

Ingredients
  

  • Raw rice : 1 cup
  • Grated coconut : ½ cup
  • Black gram : 2 tsp
  • 3 tsp Bengal gram : 2
  • Green chilli (sliced) : 2 nos
  • Mustard seeds : 1 tsp
  • Curry leaves : 1 stem
  • Coriander leaves (chopped) : as reqd
  • Cashew nuts : 5 pieces
  • Salt : to taste
  • 3 tsp Refined / Coconut oil : 2

Instructions
 

  • Cook the raw rice in medium flame and remove the water from it and keep it aside for some time to cool.
  • Heat oil in a frying pan and add the mustard seeds and allow to burst them.
  • Then add black gram, bengal gram, cashew nuts, grated coconut and sliced green chilli and stir the mix well.
  • After 2 - 3 minutes, add the curry leaves also and stir it further.
  • When the colour of the mix turns into golden, add the cooked rice and required quantity of salt and stir it well.
  • Coconut rice is ready and can be served with coconut chutney / pickles.
  • This is a very tasty food and can be prepared very easily.
