Quick to make tasty coconut rice

Ingredients
- Raw rice : 1 cup -
- Grated coconut : ½ cup -
- Black gram : 2 tsp -
- Bengal gram : 2 - 3 tsp
- Green chilli (sliced) : 2 nos -
- Mustard seeds : 1 tsp -
- Curry leaves : 1 stem -
- Coriander leaves (chopped) : as reqd -
- Cashew nuts : 5 pieces -
- Salt to taste -
- Refined / Coconut oil : 2 - 3 tsp

Instructions
- Heat oil in a frying pan and add the mustard seeds and allow to burst them.
- Then add black gram, bengal gram, cashew nuts, grated coconut and sliced green chilli and stir the mix well.
- After 2 - 3 minutes, add the curry leaves also and stir it further.
- When the colour of the mix turns into golden, add the cooked rice and required quantity of salt and stir it well.
- This is a very tasty food and can be prepared very easily.
