Ponnanganni Cheera Thoran | Dwarf Copperleaf Spinach Stir Fry

Nutritious Ponnanganni Cheera Thoran is a Kerala-style stir fry with dwarf copperleaf spinach, perfect for healthy, traditional meals.

Ingredients
  

  • 250 g Poonanganni Cheera
  • 1/2 Cup Grated Coconut
  • 1/4 Cup Chopped Onion
  • 2 Tsp Chopped Green Chilli pieces
  • 3 Tsp Coconut/Refined Oil 
  • As reqd Salt

Instructions
 

  • Clean Ponnanganni Cheera, and put them in a plate/bowl. Add some normal water and keep it in water for about 15 – 20 minutes.

  • After about 15 – 20 minutes, take them out from the water and chop into small pieces as shown in the picture.

  • Heat oil in a cheenachatti/frying pan and add chopped onion/shallot pieces. Stir it well. When colour of the onion pieces turns golden, add chopped green chilli pieces. Stir well. After 2 – 3 minutes, add the Ponnanganni Cheera pieces along with required quantity of salt. Stir it further (no water should be added). Cover the        pan with a lid and cook in medium flame.

  • When the cheera is cooked well, put off the stove and add grated coconut into it. Stir it well,

  • Ponnanganni Cheera Thoran is ready. Serve the tasty and healthy side dish with cooked rice.
