Beetroot Fry In Andhra Style

Ingredients
  

  • 3 nos Beetroot : 2
  • Salt : to taste
  • Coriander powder : 2 tsp
  • Red chilli powder : 1 tsp
  • Grated coconut : ½ cup
  • Chopped onion / shallots : 1/2 cup
  • 3 tsp Coconut / refined oil : 2

Instructions
 

  • Peel the beetroots and then cut them into small pieces and keep the pieces separately.
  • Heat oil in a frying pan and then add the chopped onion into the heated oil.
  • Stir the onion well.
  • Add the coriander powder, red chilli powder and salt into the onion and stir it further.
  • When the colour of this mix turns into golden, add the beetroot pieces into the mix and cover the frying pan with a lid and allow to cook the mix for about 10 - 15 minutes in low flame - without adding water.
  • When the mix is cooked well, add the grated coconut and stir it further for about 2 - 3 minutes.
  • Beetroot fry is ready and can be served with poori, chappathi , cooked rice etc.
