Vegetable Schezwan Noodles

Ingredients
  

  • 1 pack Dried Hakka noodles
  • 4 nos Spring onion
  • 1 no. Carrot(large)
  • 50 g French beans
  • 1/2 inch piece Ginger finely chopped
  • 6 cloves Garlic minced
  • 10 nos Whole red chillies
  • 1 tsp Schezwan paste
  • 1 tsp Light soya sauce
  • 4 tsp Sesame oil
  • As reqd Salt & pepper

Instructions
 

  • Boil a pot of water and add salt and 1 tsp oil to it.
  • Add the dried hakka noodles to the boiling water and cook for 5 - 7 minutes or till the noodles are cooked.
  • Drain off the water and blanch the noodles in cold water.
  • Apply 1 tsp oil to the boiled noodles and mix well so that they don’t get sticky.
  • Heat 2 tsp sesame oil in a wok and add the chopped spring onion, ginger, garlic and whole red chillies and sauté for 2 - 3 minutes.
  • Add the cut beans and carrots and stir fry for 1 minute more (you can add vegetables of your choice - beans sprouts, pak choi, broccoli, cabbage, capsicum etc).
  • Add the Schezwan sauce, boiled noodles, soya sauce, salt and pepper and toss the noodles so that all the ingredients are well mixed. Enjoy the dish.
