Spinach : 2 bunches
Garlic ( peeled and very thinly sliced ) : 3 cloves
Sesame oil : 2 tsp

Whole red chillies : 8
Sugar : ½ tsp
Salt : as reqd
Freshly ground black pepper : few
Instructions
Clean and wash the spinach and drain of all the water.
In a large pan, heat sesame oil over high heat until very hot, almost smoking.
Add minced garlic and sauté till it turns golden brown in color.
Add whole red chillies and sauté for a minute.

Add the spinach, salt and sugar and cook, turning continuously till the spinach wilts. Add freshly ground black pepper.
Toss well and serve.
