Ingredients
  

  • Brinjal cubed : 1 nos
  • Vaal beans (Lablab Beans) : 100 gm
  • Potato cubed : 1 no
  • 4 tsp Coriander leaves : 3
  • 8 nos Green chilies : 7
  • Onion : 1 no
  • Garlic ginger paste : 1 tsp
  • Coriander seeds : 2 tsp
  • Cumin seeds : 1 tsp
  • Turmeric powder : ½ tsp
  • Sugar : 1 tsp
  • 3 tsp Oil : 2
  • Salt : as reqd

Instructions
 

  • Grind the coriander leaves, green chilies, garlic ginger paste, coriander seeds, cumin seeds and salt to a fine paste.
  • Heat oil in a pan, add onion and fry the ground masala paste with ½ tsp turmeric powder and a little water.

  • Cover the pan and cook till the oil separates from the masala.
  • Add the cubed brinjal, potato and vaal.

  • Add ½ cup water, cover the pan and cook on a low flame for 15 - 20 minutes till the vegetables are cooked.
  • Serve with roti.
