Simple Vegetarian Coconut Rice

Coconut rice made using coconut milk & vegetables

Ingredients
  

  • Rice : 2 cup
  • Garam masala : 2 tsp
  • Green chilly : 1 no
  • Onion : ½ no
  • Potato : ½ cup
  • Carrot : ½ cup
  • Coconut milk : 2 cup
  • Ghee : 1 tsp
  • Salt : to taste
  • Water : 1 ½ cup

Instructions
 

  • Heat a pan add oil or ghee in it and when it hot add onion to it and stir well.
  • To this add carrot and potato and sauté it well.
  • Then add 1 ½ cup water to it .
  • When it gets boiled add rice to it and close the pan for 5 minutes.

  • Then add coconut milk to it and stir well.

  • Then close it and wait until it gets cooked.
  • When rice gets cooked stir it well and serve hot.
