Brinjal Potato Masala

Ingredients
  

  • Boiled and cut Potato : 1 cup
  • Cleaned and cut Brinjal : 1 cup
  • Cleaned and cut Tomato : 1 cup
  • Cleaned and cut Onion : 1 cup
  • Cleaned and cut garlic : 1 tsp
  • Cleaned and cut Ginger : 1 tsp
  • Cleaned and cut Coriander leaves : 2 tsp
  • Chilli Powder : 2 tsp
  • Turmeric Powder : 1 tsp
  • Garam Masala : 1 tsp
  • Salt : As reqd

Instructions
 

  • Heat the brinjal pieces in some oil for about five minutes and then take it out and keep it aside.
  • Also heat the onion pieces in the same way.
  • Add the tomato pieces into the heated onion and mix it well.
  • Add the chilli powder, turmeric powder, garam masala and salt into the tomato and onion mix and stir this mix till the colour turns into golden.
  • Add the boiled potatoes and Brinjal into this mix of onion and tomato with masala.
  • Stir this mix well and allow to boil it for about minutes and if you want fried masala, put off the stove and remove the masala from the stove.
  • If you want to make gravy masala then add some water (as required) into this mix and allow it to boil for further five minutes time.
  • This masala can be served with Chappathi, Poori, rice etc.
