Carrots : 3 nos (chopped/shredded)
Green chillies : 2 nos (slit)
Garlic : 2 cloves
Coconut : 1 ½ cup (grated)
Mustard seeds : 1 tsp
Dry red chillies : 2 nos
Curry leaves : few
Turmeric powder : ½ tsp
Coconut oil : as reqd
Instructions
Chop the carrots thinly or grate according to the taste. 2) Cook the carrot with little water, turmeric and required salt.
Completely dry out the water. Strain and keep aside.4) In a processor crush green chillies, garlic and coconut.
Heat 1 tbsp oil, splutter mustard seeds, chillies and curry leaves.6) Add the coconut mixture and fry in slow flame. Do not burn the mixture.
Immediately add the cooked carrot and mix well.8) Tasty carrot coconut stir fry is ready to serve.
