Ingredients
  

  • Carrots : 3 nos (chopped/shredded)
  • Green chillies : 2 nos (slit)
  • Garlic : 2 cloves
  • Coconut : 1 ½ cup (grated)
  • Mustard seeds : 1 tsp
  • Dry red chillies : 2 nos
  • Curry leaves : few
  • Turmeric powder : ½ tsp
  • Coconut oil : as reqd

Instructions
 

  • Chop the carrots thinly or grate according to the taste. 2) Cook the carrot with little water, turmeric and required salt.
  • Completely dry out the water. Strain and keep aside.4) In a processor crush green chillies, garlic and coconut.
  • Heat 1 tbsp oil, splutter mustard seeds, chillies and curry leaves.6) Add the coconut mixture and fry in slow flame. Do not burn the mixture.
  • Immediately add the cooked carrot and mix well.8) Tasty carrot coconut stir fry is ready to serve.
