Aval Vilayichathu | Aval Jaggery Mix is a traditional Kerala sweet dish made with beaten rice, jaggery, and coconut. A healthy snack for festivals and tea time.

2 Cups Aval 1 Cup Grated coconut 1 Tbsp Ghee 10 Nos. Cashew nuts 10 Nos. Raisins ½ Tsp black sesame 1/4 Cup Sugar 3 Nos. Cardamom Elakka 1 Cup Jaggery Melt in ½ cup water
Mix aval and grated coconut. Powder ¼ cup sugar with 3 cardamom and add it into this mix. Mix and keep aside.
Heat ghee in a pan.
Fry cashews.
Add raisins and keep frying in low flame. Remove from pan and keep aside.
Add black sesame into the same pan and heat in low flame.
Add aval coconut mixture. Mix for 30 seconds.
Pour jaggery syrup (Melt jaggery in 1/2 cup water and strain it.) Mix for another 30 seconds in low flame.
Add roasted cashew raisins and remove from the flame.
Serve with tea.
