- For preparing Churakka Vanpayar Thoran, first peel off the skin and deseed the bottle gourd. 
- Clean it well and chop it finely. 
- Clean well the vanpayar too and cook it separately in a pressure cooker. 
- Place the grated coconut, cumin seeds, green chillies, garlic, turmeric powder and curry leaves in a mixer bowl and run it once to get a coarse form. 
- Mix the above with the finely chopped gourd and add salt. 
- Heat oil in a pan or a kadai. 
- Splutter mustard seeds and saute dry red chillies, rice and curry leaves. 
- Add the gourd-coconut mixture and mix well. 
- Cover and cook on a low flame. 
- Stir occasionally. 
- After 2 to 3 minutes, remove the lid and stir well. 
- Add the cooked van payar and mix well again. 
- Continue to cook, till done. 
- Enjoy tasty nutritious Churakka Vanpayar Thoran.
