After the chicken pieces are fried, add crushed ginger, garlic and curry leaves into the same pan. Saute it for one minute.
Then add sliced onion and green chilly.
Saute the onion until it becomes super soft.
Then add tomato.
Cook the tomatoes until soft.
Now add coriander powder, turmeric powder, garam masala powder and chilly powder. Saute for one minute to get rid off the raw smell of masala powders.
Add reserved chicken gravy and check for salt.
Bring it to boil and add chopped coriander leaves.
Now add the fried chicken pieces.
Cook for 2-3 minutes until the chicken piece are well coated in the masala. Switch off the stove.
To cook rice (you can cook the rice while chicken is being cooked). Heat oil and ghee in a bottom thick pan and add the spices, grated carrot, coriander leaves, biriyani leaves and green chilly.
Add required water.
Add rice (washed and soaked for 30 minutes, then drained). Add salt as required. Bring it to boil.
Now reduce the flame into low. Cover with lid and cook for 10 minutes
When the rice is 90% cooked, add fried onion and chicken stock water. Cover and cook for few more minutes and remove from the flame.
Served with pickle, pappad, raitha,chammanthi..Enjoy!
