Pineapple Vegetarian Fried Rice

Ingredients
  

For the rice:-

  • 2 cups Basmati rice washed and drained
  • 1 small Coconut milk reserve the cream on top of the tin
  • 2 pcs Cloves
  • 1 pcs Cinnamon
  • 2 pcs Star anise
  • Salt to taste
  • 3 1/2 cups Hot water
  • Oil for cooking
  • For the vegetables
  • 1 cube Maggi taste maker
  • Or
  • 1 tbsp Vegetable stock powder
  • 2 tsp Curry powder
  • 1/2 cup Carrots diced
  • 1/2 cup Beans sliced diagonally
  • 1/2 cup Green peas
  • 1 bunch Spring onion chopped
  • 3/4 cup Pineapple diced
  • 1/2 tsp Ginger chopped
  • 1/2 tsp Garlic chopped
  • 3 chopped green chillies
  • For garnishing
  • 1/2 cup Golden fried onions
  • 2 tbsp Fried cashews and raisins
  • 2 nos Red chillies whole fried
  • 2 tbsp Pineapple pieces
  • 1/2 tsp Pineapple essence optional

Instructions
 

  • Heat a medium pan, gradually add oil and stir in cinnamon, cloves and star anise.
  • When the spices turn fragrant , add the rice and stir fry continuously, adjust the seasoning. :- the rice may swell and separate from each other.
  • Pour in coconut milk (reserve the cream) and hot water to make up 4 cups of liquid.
  • Bring the rice to a full boil, then simmer for 20 minutes. Remove from the stove and let it sit. Use a fork to fluff up the rice. :- Rice is cooked by absorption method.
  • Heat a wok on low flame, add the reserved coconut cream when it melts, add ginger, green chillies and garlic and stir fry.
  • When fragrant add the vegetables, curry powder and stock powder and continue to stir fry.
  • Add extra oil to the pan so that it does not stick to the bottom.
  • Gradually add spring onions chopped and stir fry (about 1 minute) Stir in pineapple pieces. Adjust the seasoning. Switch off the flame.
  • Take a deep bottomed vessel. Partly fill the bottom with coconut rice and layer the vegetables over it. Sprinkle cashew, raisins and fried onions.
  • Continue layering in the same manner. Finally, end up with rice on top. 10)Garnish with fried onions, cashews, raisins and pineapple pieces. Drizzle essence over it. Close with a tight fitting lid.
  • Put in a pre heated oven at 350 c and bake for 20 minutes.
  • :- Pineapple Vegetarian Fried Rice is ready!!!
