Grind the potatoes into a coarse paste.
Heat a sauce pan.
Melt the butter and add the potato paste into it.
Saute it for a couple of mins.
Add milk, double cream and sugar and stir well.
Add vanilla essence and cardamom powder.
Keep stirring until a thread like consistency is achieved.
Now remove it from the fire.
In a small wok roast the raisins and cashew nut in ghee.
Pour this ghee along with the cashews and raisins on top of the halwa.
Allow the halwa to cool for an hour.

Once cool your halwa is ready.
