Egg - Cheera Thoran

Spinach and egg with grated coconut

Ingredients
  

  • 500 gm Spinach Cheera
  • 4 nos Eggs
  • 2 nos Onion finely chopped
  • 1 tsp Mustard seeds
  • 2 tsp Oil
  • 1 sprig Curry leaves
  • 2 nos Red chillies Kollamulaku
  • 2 nos Green chillies
  • 1/2 tsp Chilly powder
  • 1/4 tsp Turmeric powder
  • 1/2 cup Grated coconut
  • Salt As reqd
  • 1/2 cup Water

Instructions
 

  • Wash the spinach and cut into small pieces.
  • :- The spinach packets can be used.
  • Heat oil in a pan or a kadai.
  • Splutter mustard seeds.
  • Add red chillies, green chillies, curry leaves and onions and saute, till onions turn light brown.
  • Add the spinach, turmeric powder, chilly powder, salt and water.
  • Cook till the spinach is done.
  • Add the eggs and scramble it well.
  • Once the eggs are cooked, add the coarsely ground coconut and cook for 5 mins on medium flame.
  • :- Serve hot with rice or chappathis.
  • :- You can add a pinch of cumin seeds(jeerakam) and a small pod of garlic while grindig coconut into a coarse form.
