Wash the spinach and cut into small pieces.
:- The spinach packets can be used.
Heat oil in a pan or a kadai.
Splutter mustard seeds.
Add red chillies, green chillies, curry leaves and onions and saute, till onions turn light brown.
Add the spinach, turmeric powder, chilly powder, salt and water.
Cook till the spinach is done.
Add the eggs and scramble it well.
Once the eggs are cooked, add the coarsely ground coconut and cook for 5 mins on medium flame.
:- Serve hot with rice or chappathis.
:- You can add a pinch of cumin seeds(jeerakam) and a small pod of garlic while grindig coconut into a coarse form.
