Egg - Cheera Thoran Spinach and egg with grated coconut 500 gm Spinach (Cheera)4 nos Eggs2 nos Onion (finely chopped)1 tsp Mustard seeds2 tsp Oil1 sprig Curry leaves2 nos Red chillies (Kollamulaku)2 nos Green chillies1/2 tsp Chilly powder1/4 tsp Turmeric powder1/2 cup Grated coconutSalt (As reqd)1/2 cup Water Wash the spinach and cut into small pieces.:- The spinach packets can be used.Heat oil in a pan or a kadai.Splutter mustard seeds.Add red chillies, green chillies, curry leaves and onions and saute, till onions turn light brown.Add the spinach, turmeric powder, chilly powder, salt and water.Cook till the spinach is done.Add the eggs and scramble it well.Once the eggs are cooked, add the coarsely ground coconut and cook for 5 mins on medium flame.:- Serve hot with rice or chappathis.:- You can add a pinch of cumin seeds(jeerakam) and a small pod of garlic while grindig coconut into a coarse form.
