Ingredients
  

  • 1 no Long Brinjal cut into small pieces, Vazhuthananga
  • 1 full Garlic pod
  • 2" piece Ginger finely chopped
  • 5 nos Green chillies medium
  • 2 pinch Turmeric powder
  • 2 tbsp Chilly powder
  • 1 tsp Fenugreek powder Uluva
  • 1 tsp Mustard seeds
  • Salt As reqd
  • 3 tbsp Vinegar
  • 1 - Oil

Instructions
 

  • Heat oil in a pan.
  • Splutter mustard seeds.
  • Add ginger and garlic and stir for a few mins.
  • Add brinjal and saute for few mins.
  • Add all the powders and salt.
  • Cook, till the oil starts to separate.
  • Add vinegar.
  • Allow it to cool.
  • Preserve it.
