Palappam

Palappam is a delicious traditional styled breakfast dish, very popular in God's Own Country. The dish goes well with any curry dish like mutta curry, chicken stew, peas curry etc as per your choice be it vegetarian or non vegetarian. The lacey edged soft and delicious Palappam is a sure treat to your palate. The lacey frilled appams are a culinary delight and no function is ever complete without Palappam. The dish is prepared from fermented rice batter which is spread out in a appachatti with a soft bulge in the centre. It should be well cooked in the centre. Ingredients
  

  • 5 cups Basmati rice
  • 2 cups Coconut milk
  • 15 tbsp Cooked rice
  • 1/2 cup Water
  • 5 tbsp Sugar
  • 3/4 tsp Active dry yeast available in all grocery stores

Instructions
 

  • Soak basmati rice in water for 5 hours.
  • Grind together basmati rice and cooked rice along with coconut milk into a very fine batter.
  • Microwave the water for 15 - 20 seconds, to make it luke warm.
  • Add sugar and yeast and stir well. Keep it aside for 5 mins.
  • Add the above yeast solution into the batter.
  • Leave it overnight for fermentation.
  • At the time of preparation, add extra sugar to sweeten your appams.
  • Heat a non-stick appachatti or any other kadai which has a cover.
  • Pour a ladle of batter into it and spread it a bit by twisting the pan with your hands.
  • Cover and cook on medium heat for 2 - 3 mins or till it has cooked well.
  • Delicious appams are ready.
