Vellayappam is a widely accepted Kerala breakfast dish prepared from raw rice and coconut. Spongy white Vellayappam is a traditional tasty dish that goes well with any vegetarian or non vegetarian curry of your choice. Vellayappam is unique and special with raw rice ground with grated coconut and after fermentation with yeast, cooked as pancakes. Ingredients
  

  • 4 cups Raw Rice
  • 1 cup Coconut or cut into small pieces, grated
  • 1/2 cup Cooked rice cooked rice from previous day
  • 1/4 tsp Baking soda I use yeast - 1/2 pkt or 4 gm
  • Salt As reqd

Instructions
 

  • To make the batter:- Soak rice for 4 - 6 hours.
  • Dissolve the yeast in some warm water.
  • Grind the rice along with the grated coconut & cooked rice thoroughly.
  • Now add the dissolved yeast & salt.
  • After mixing in all the ingredients, keep the batter to ferment overnight.
  • The following morning, the batter would have fermented & is now ready to make the appams.
  • Pour some(4 tbsp) batter into a heated pan and rotate/spread with a ladle. When cooked, take the vellayappam out with a spatula and it is ready to serve.
  • :- Vellayappam is best if served with Stew(a dish made with potatoes, onions & coconut milk).
