Pav Bhaji - North Indian

Spicy mashed vegetables served with toasted buns

Ingredients
  

  • Pav(Burger buns)
  • 2 nos Onions
  • 2 nos Potatoes
  • 1/2 cup Cauliflower
  • 1 no Carrot
  • 1 no Green Capsicum
  • 1 no Red Capsicum
  • 2 nos Tomato paste or Fresh tomatoes
  • 1 tsp Pav Bhaji Masala
  • Ginger garlic paste - 1 tsp
  • Red Chilly Powder As reqd
  • Salt As reqd
  • 2 tbsp Veg oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds Jeerakam
  • Coriander leaves(chopped)
  • 1 tsp Lemon juice
  • 2 tbsp Butter

Instructions
 

  • Chop the potaotes, carrots, cauliflower, green and red capsicum.
  • Pressure cook them with salt, till it gets cooked(about 10 min).
  • Drain the water and mash the vegetables, so that it becomes a fine paste. Keep it aside.
  • Heat oil in a non-stick pan.
  • Add mustard and cumin seeds and allow them to splutter.
  • Add onions and fry, till it becomes translucent.
  • Add Pav-bhaji masala powder, garlic-ginger paste, salt and red chilly powder.
  • Add tomato paste or finely chopped tomatoes and cook for 5 min.
  • Add the mashed vegetable paste and mix well.
  • Add butter and lemon juice.
  • Garnish with coriander leaves.
  • Slightly toast the pav(burger buns) with butter on a tava.
  • :- Serve with delicious pav-bhaji.
