Chop the potaotes, carrots, cauliflower, green and red capsicum.
Pressure cook them with salt, till it gets cooked(about 10 min).
Drain the water and mash the vegetables, so that it becomes a fine paste. Keep it aside.
Heat oil in a non-stick pan.
Add mustard and cumin seeds and allow them to splutter.
Add onions and fry, till it becomes translucent.
Add Pav-bhaji masala powder, garlic-ginger paste, salt and red chilly powder.
Add tomato paste or finely chopped tomatoes and cook for 5 min.
Add the mashed vegetable paste and mix well.
Add butter and lemon juice.
Garnish with coriander leaves.
Slightly toast the pav(burger buns) with butter on a tava.
