Tamil Nadu Uppuma

Uppuma in a different way

Ingredients
  

  • 2 cups Semolina Rava/Sooji
  • 1 cup Ground nuts Nelakadala
  • 4 - Green chillies cut into pieces
  • 1" piece Ginger grated
  • 4 cups Water
  • Salt As reqd
  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • Asafoetida(optional) A pinch, Kayam
  • Curry leaves A few

For garnishing:

  • Coriander Leaves
  • Shredded Capsicum
  • Grated Carrot
  • Mint leaves(Pudhina)

Instructions
 

  • Heat a pan.
  • Dry roast the ground nuts and grind it into a very coarse powder.
  • In the same pan, add oil.
  • When it is hot enough, add mustard seeds.
  • When mustard seeds splutter, add asafoetida, curry leaves and rava or sooji.
  • Fry it by mixing continuously, till the rava slightly changes the color and becomes more aromatic.
  • Meanwhile, in a vessel, pour 4 cups of water and bring it to boil.
  • Pour the hot water onto the rava carefully.
  • Immediately, add salt and coarse ground nuts and mix it well making sure no lumps are formed.
  • Cook, till it gets the consistency of regular uppuma.
  • Once cooked, switch off the flame and close the lid of the pan and leave it for couple of minutes.
  • Garnish with the chosen/available items.
  • :- Serve it in any desired shape.
