Biscuit Roti

A slightly sweet roti

Ingredients
  

For the dough:

  • 4 cups Allpurpose flour Maida
  • Salt As reqd
  • 4 tbsp Water
  • Oil (hot)
  • For the filling:
  • 1/2 a Grated coconut
  • 2 tsp Coriander powder
  • 2 tsp Cumin powder Jeerakam
  • 1/2 tsp Chilly powder
  • Jaggery Size of a lemon, Sharkkara
  • 1 tbsp Semolina roasted Rava
  • Coriander leaves(chopped)
  • Salt As reqd

For the seasoning:

  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • 3-4 nos Green chillies
  • 6-7 nos Curry leaves
  • Oil for frying

Instructions
 

  • Mix all the ingredients for the filling in a bowl.
  • Heat a little oil in a pan.
  • Add mustard seeds and when they splutter, add finely cut green chillies, curry leaves.
  • Add this seasoning to the filling and mix well.
  • Prepare a smooth dough of maida with water, salt and oil. Keep aside for 30 minutes.
  • Make small balls off the dough and roll them into small pooris.
  • Keep one tbsp of the filling in the centre of each poori and fold them.
  • Roll gently again.
  • Fry them in oil.
