For making the dough:
1)Sieve the baking powder, 1 tsp of salt and maida together.
Melt the butter and add to this and mash it with your palm for about 15 minutes till it becomes fluffy.
Add black cumin seeds or kala jeera.
Make a well in the center of maida mixture and put milk, curd, sugar and spread fresh yeast on it.
When the yeast starts bubbling, knead the mixture to make a slightly elastc dough. Keep aside for 5-6 hours.
For making the stuffing:
1)Mix cabbage, carrot and paneer together.
Add salt, black pepper, garam masala.
Make balls off the maida dough.
Stuff the mixture into maida balls and roll into slightly thick rotis. Grill it in tandoor till done. 4) May garnsih with finely chopped fresh coriander leaves. Makes: 10-12 Kulchas
