Vegetable Kabsa
Kabsa is commonly regarded as the national dish of Saudi Arabia. A traditional rice dish similar to a biriyani,typically made with lamb or chicken. This is the vegetarian version of Ksbsa.

3 cups Basmati rice 6 Cardamom 3 small Cinnamon 10 Pepper 2 Onion finely chopped 2 tbsp Ginger/ garlicpaste 1 Dried lime 100 gm Carrots grated 100 gm Beans finely chopped 2 Tomato 2 tbsp Kabsa masala powder Salt to taste
Wash and soak the rice for half an hour.
Heat oil in a pan, add onion, ginger, garlic paste and saute it well.
Add carrot,beans and mix well.
Add tomato puree,mix and stir well till the raw smell goes.
Add kabsa masala powder,cardamom,pepper,cinnamon .Then add 6 cups of water , dried lime along with salt.
When it starts to boil,cover and cook it on low flame till the water is completely dried up and the rice is done.
Vegetable Kabsa is ready .Serve hot with veg or non veg curries and salads.
