Ingredients

Brinjals : 150 gm
Mustard seeds : a few
Curry leaves : 1 leaf
Garlic : a few
Vinegar : 1tsp
Tamarind : a few
Onions : ½ of a small onion
Cinnamon stick : 1 no
Coriander powder : 1 tsp
Dry chilli : a few
Sugar : ½ tsp
Cumin powder : ¼ tsp
Turmeric powder : a pinch
Salt : to taste
Coconut milk : 1 cup
Instructions
Slice the brinjals length wise and rub over with turmeric and salt.
Grind together red chillies, mustard seeds and cinnamon stick.
Soak tamarind in water.
Heat oil. Fry brinjals .
Boil together fried brinjals, ground spices, vinegar, turmeric, curry leaves, cumin and coriander powder. Add tamarind water also.
To this add coconut milk.
Simmer till brinjals are well cooked. Add sugar just before removing from fire.
