  • Slice the brinjals length wise and rub over with turmeric and salt.
  • Grind together red chillies, mustard seeds and cinnamon stick.
  • Soak tamarind in water.
  • Heat oil. Fry brinjals .
  • Boil together fried brinjals, ground spices, vinegar, turmeric, curry leaves, cumin and coriander powder. Add tamarind water also.
  • To this add coconut milk.
  • Simmer till brinjals are well cooked. Add sugar just before removing from fire.
  • Brinjal Pahie ready.
