Instructions
For preparing Mexican rice, heat oil in a pan and stir fry the chicken pieces in high flame till well browned. Remove and keep it aside.
In the same oil, fry the onions, garlic, chilly powder and salt for 5 minutes.
Add in the rice, fried chicken pieces, pepper and the stock.
Stir well and cook till almost done.
Then stir in the tomatoes and cook over a low flame until the rice is completely cooked.
Mexican rice is ready. Serve hot.
